Off-Book: Pimm’s Cups
I love a good Pimm’s Cup. I also really, really hate a bad one. I am always baffled when a drink that has exactly two ingredients is bad. Confronted with a bad Pimm’s Cup, I always assume one of two things has happened: either the bartender has inadvertently used plain soda instead of whatever they were trying to use, or they’ve gone and done that horrifying thing where people mix Coke and Sprite and pretend that makes some sort of facsimile of ginger ale.
The second of these is one of my major bar pet peeves. It’s just so gross. Man up. Tell me you don’t have ginger ale. I’ll order something else.

Pimm’s Cup (adapted from the recipe provided by Pimm’s)
1.5 oz. Pimm’s No. 1 Cup
ginger aleFill a tall bar glass 1/2 way with ice. Add the shot of Pimm’s, and then top with ginger ale. Make your own ginger ale like so. If it tastes off, odds are the ginger ale is too sweet. Add a bit more lime juice.
I also very much recommend serving these with straws. Some drinks just call for a straw, and a Pimm’s Cup is such a drink. Pimm’s Cups can also be made with lemon or lemon-lime soda (like Sprite). I vote for the ginger ale.
